Instructions
Whisk olive oil, chipotle, lime juice, garlic, cumin, salt, and pepper. Marinate chicken for 15 min to 4 hrs.
Cook rice with water or broth, then fluff and fold in lime juice, cilantro, and salt.
Grill or pan-fry chicken until cooked through, then rest and slice.
Warm beans and corn; prepare toppings.
Assemble bowls with rice, chicken, beans, corn, pico, and toppings. Squeeze lime before serving.
Notes
For extra flavor, marinate chicken longer and add your favorite toppings.
