A flavorful and customizable bowl combining spicy marinated chicken, zesty lime rice, and fresh toppings for a satisfying meal.

Ingredients

Protein

  • 1 lb boneless, skinless chicken breasts or thighs
  • 2 tbsp olive oil
  • 1 tbsp chipotle in adobo, minced
  • 1 unit lime (Juice of 1 lime)
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • to taste Salt & pepper

Rice

  • 1 cup uncooked long-grain white rice
  • 2 cups water or chicken broth
  • 1 unit lime (Juice of 1 lime)
  • ΒΌ cup chopped fresh cilantro
  • to taste Salt

Toppings

  • 1 cup canned black beans, rinsed and drained
  • 1 cup corn
  • 1 cup pico de gallo
  • optional Sliced avocado or guacamole
  • optional Shredded pepper jack or cotija cheese
  • optional Dollop of Greek yogurt or sour cream
  • optional Extra hot sauce
  • optional Lime wedges for squeezing

Instructions 

  • Whisk olive oil, chipotle, lime juice, garlic, cumin, salt, and pepper. Marinate chicken for 15 min to 4 hrs.
  • Cook rice with water or broth, then fluff and fold in lime juice, cilantro, and salt.
  • Grill or pan-fry chicken until cooked through, then rest and slice.
  • Warm beans and corn; prepare toppings.
  • Assemble bowls with rice, chicken, beans, corn, pico, and toppings. Squeeze lime before serving.

Notes

For extra flavor, marinate chicken longer and add your favorite toppings.
