A fresh and zesty salad featuring succulent shrimp, vibrant vegetables, and a tangy lime dressing, perfect for a light and flavorful meal.

Ingredients

Protein

  • 1 lb Shrimp, raw

Vegetables

  • 8 cups Baby organic greens, mixed
  • 1 cup Cherry tomatoes
  • 1 large English cucumber

Seasonings & Fruits

  • 1 tsp Garlic powder
  • 2 Limes, small Limes (Juiced for dressing and avocado topping)
  • 1 tsp Onion powder
  • 6 small Red chilies (Adjust to taste)
  • 1 small Red onion
  • 1 large Avocado (Chopped and drizzled with lime juice)
  • 1 tsp Honey, raw
  • 1 tbsp Avocado oil
  • 1 tsp Chili powder
  • 1 tsp Paprika, smoked
  • 1 pinch Sea salt and fresh ground black pepper
  • 4 tbsp Olive oil

Instructions 

  • Marinate shrimp with chili powder, paprika, garlic powder, onion powder, salt, pepper, and 2 tbsp olive oil. Cook until pink and opaque.
  • Juice the limes and mix with honey, remaining olive oil, and chopped red chilies to make the dressing.
  • In a large bowl, combine greens, cherry tomatoes, sliced cucumber, red onion, and chopped avocado.
  • Add cooked shrimp to the salad and drizzle with lime dressing. Toss gently to combine.
  • Serve immediately, garnished with extra lime or chili if desired.

Notes

For extra flavor, marinate the shrimp longer or add fresh herbs like cilantro.
