A vibrant and flavorful dish combining spicy shrimp with a refreshing avocado-cucumber salad, perfect for a quick and satisfying meal.

Ingredients

Salad

  • 1 large avocado, sliced
  • 1 large Persian cucumber
  • 3 green onions green onions, sliced
  • 2 tbsp cilantro, chopped (leaves & stems)
  • 2 tbsp lime juice
  • 1 tbsp olive oil
  • ¼ tsp salt
  • Cracked black pepper to taste

Spice Mix

  • 2 tsp chili powder
  • 1 tsp cumin
  • 1 tsp salt
  • ½ tsp smoked paprika
  • ½ tsp garlic powder
  • ¼ tsp black pepper
  • tsp cayenne

Shrimp

  • 1 lb raw shrimp, peeled & deveined
  • 2 tbsp olive oil, divided
  • for serving Cooked white rice
  • for serving Lime wedges
  • optional Tortilla chips

Instructions 

  • Mix avocado, cucumber, green onions, and cilantro in a bowl.
  • Whisk lime juice, olive oil, and salt; pour over salad and toss.
  • Prepare spice mix and coat shrimp with olive oil and spices.
  • Cook shrimp in a skillet over medium heat for 2-3 minutes per side until pink.
  • Assemble bowls with rice, topped with shrimp and salad. Serve with lime wedges and chips if desired.

Notes

For extra flavor, add a squeeze of fresh lime before serving.
