A hearty and flavorful casserole combining spicy chili with moist cornbread, perfect for a comforting family dinner.

Ingredients

Meat and Vegetables

  • 2 tablespoons olive oil
  • 2 pounds lean ground beef
  • 1 cup diced yellow onion
  • 1 tablespoon minced garlic
  • 2 tablespoons tomato paste
  • 14.5 ounce can petite diced tomatoes (drained)
  • 30 ounce cans tomato sauce
  • 15 ounce can mild chili beans in sauce (drained but not rinsed)
  • 1.25 ounce packet chili seasoning mix

Dairy and Cornbread

  • ¾ cup whole milk
  • 2 large eggs (room temperature)
  • 2 boxes Jiffy brand cornbread mix
  • ¾ cup sweet yellow corn
  • 1 cup shredded mild cheddar cheese

Toppings

  • Sour Cream Sour Cream
  • Thinly sliced green onions (scallions) green onions (scallions)

Instructions 

  • Preheat oven to 375°F (190°C).
  • Cook ground beef with onions and garlic until browned; add tomato paste, diced tomatoes, tomato sauce, chili beans, and seasoning. Simmer for 10 minutes.
  • Mix cornbread batter with milk, eggs, corn, and cheese.
  • Spread chili mixture in a casserole dish, top with cornbread batter, and bake for 30-40 minutes until golden.
  • Garnish with shredded cheese, green onions, and serve with sour cream.

Notes

For extra spice, add jalapeños or hot sauce to the chili mixture.
