  • 1 bag frozen french fries
  • 1 lb ground beef
  • 1 small yellow onion (chopped)
  • 2 cloves minced garlic
  • 2 tablespoons chili powder
  • 2 teaspoons ground cumin
  • 1.5 teaspoons smoked paprika
  • 1 teaspoon freshly ground black pepper
  • 1/8 teaspoon ground cayenne pepper
  • 1 15-ounce can fire roasted diced tomatoes (NOT drained)
  • 1.25 cups low-sodium beef broth
  • 3-4 tablespoons tomato paste
  • 1 tablespoon brown sugar
  • 1 tablespoon Worcestershire Sauce
  • 1 15-ounce can dark red kidney beans (drained and rinsed)
  • 2 tablespoons butter
  • 2 tablespoons flour
  • 0.25 teaspoon garlic powder
  • 0.25 teaspoon onion powder
  • 0.25 teaspoon chili powder
  • 0.25 teaspoon ground cumin
  • 0.25 teaspoon paprika
  • 1.25 cups whole milk
  • 1.5 cups sharp cheddar
  • to taste salt and pepper

Instructions 

  • Brown the ground beef in a large pot. Add onion and cook until soft.
  • Add garlic and spices; cook for 1 minute. Stir in tomatoes, broth, tomato paste, sugar, and Worcestershire. Simmer 30-40 mins.
  • Add kidney beans and simmer 15 mins. Meanwhile, cook fries until crispy.
  • Make cheese sauce: melt butter, whisk in flour and spices, add milk, simmer until thickened, then stir in cheese.
  • Layer fries, chili, and cheese sauce. Season with salt and pepper. Serve immediately.
