Ingredients

Salad Ingredients

  • 1 can chickpeas, drained and rinsed
  • 1 whole avocado, pitted and diced
  • 4 ounces feta cheese, crumbled
  • 1/2 cup red onion, thinly sliced
  • 1/2 cup fresh parsley, chopped
  • 1/4 cup fresh mint, chopped
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice, freshly squeezed
  • 1 clove garlic, minced
  • 1/2 teaspoon dried oregano
  • salt and pepper to taste

Instructions 

  • Combine chickpeas, avocado, feta, red onion, parsley, and mint in a large bowl.
  • Whisk olive oil, lemon juice, garlic, and oregano in a small bowl. Season with salt and pepper.
  • Pour dressing over salad and toss gently to coat.
  • Serve immediately or chill for later.

Notes

For added flavor, consider adding a squeeze of lime or some diced tomatoes.
