A flavorful and easy-to-make dish featuring seared chicken thighs served over aromatic pearl couscous with fresh herbs and vegetables.

4pieces🍗 Chicken Thighs: bone-in, skin-on
2tablespoons🥄 Olive Oil
4cloves🧄 Garlic, minced
2teaspoons🌿 Fresh Thyme, chopped
1whole🍋 Lemon, thinly sliced
1cup🍅 Cherry Tomatoes, halved
1.5cups🥣 Chicken Broth
1cup🍚 Pearl Couscous
for garnish🌿 Fresh Parsley
Instructions
Preheat oven to 375°F (190°C).
Season chicken thighs with salt and pepper. Sear skin-side down in a skillet with 1 tbsp olive oil until golden, then flip and cook 2 mins. Remove and set aside.
Add remaining oil, garlic, and thyme to skillet; sauté 1 min. Stir in couscous, then pour in broth and simmer.
Return chicken to skillet, add lemon slices and cherry tomatoes. Bake in oven 20-25 mins until cooked and broth absorbed.
Rest briefly, then garnish with parsley and serve.
Notes
For extra flavor, add a squeeze of fresh lemon juice before serving.
