A flavorful and easy-to-make dish featuring seared chicken thighs served over aromatic pearl couscous with fresh herbs and vegetables.

Ingredients

Protein

  • 4 pieces 🍗 Chicken Thighs: bone-in, skin-on
  • 2 tablespoons 🥄 Olive Oil
  • 4 cloves 🧄 Garlic, minced
  • 2 teaspoons 🌿 Fresh Thyme, chopped
  • 1 whole 🍋 Lemon, thinly sliced
  • 1 cup 🍅 Cherry Tomatoes, halved
  • 1.5 cups 🥣 Chicken Broth
  • 1 cup 🍚 Pearl Couscous
  • for garnish 🌿 Fresh Parsley

Instructions 

  • Preheat oven to 375°F (190°C).
  • Season chicken thighs with salt and pepper. Sear skin-side down in a skillet with 1 tbsp olive oil until golden, then flip and cook 2 mins. Remove and set aside.
  • Add remaining oil, garlic, and thyme to skillet; sauté 1 min. Stir in couscous, then pour in broth and simmer.
  • Return chicken to skillet, add lemon slices and cherry tomatoes. Bake in oven 20-25 mins until cooked and broth absorbed.
  • Rest briefly, then garnish with parsley and serve.

Notes

For extra flavor, add a squeeze of fresh lemon juice before serving.
