Ingredients

Protein

  • 1.5 lbs boneless chicken thighs (or breasts)
  • 3 tablespoons olive oil
  • 1 piece lemon (juice of 1 lemon)
  • 2 teaspoons ground cumin
  • 2 teaspoons ground coriander
  • 2 teaspoons paprika
  • 1 teaspoon turmeric
  • 1 teaspoon cinnamon
  • 1 teaspoon garlic powder
  • 0.5 teaspoon cayenne pepper (optional)
  • to taste Salt and pepper

Carbohydrates

  • 2 cups cooked rice (quinoa or cauliflower rice)

Vegetables

  • 1 piece cucumber (diced)
  • 1 cup cherry tomatoes (halved)
  • 1 red onion red onion (thinly sliced)
  • 1 bell pepper bell pepper (diced)
  • 2 cups lettuce or mixed greens

Sauce

  • 0.25 cup tahini
  • 2 tablespoons lemon juice
  • 1 clove garlic (minced)

Water to thin as needed

Instructions 

  • Marinate chicken with olive oil, lemon juice, and spices for at least 30 minutes.
  • Cook chicken in a skillet over medium-high heat for 5–7 minutes per side until golden brown.
  • Mix tahini, lemon juice, garlic, and water until smooth.
  • Assemble bowls with rice, sliced chicken, fresh veggies, and tahini sauce.
