A hearty and flavorful Louisiana-style gumbo featuring chicken, sausage, and shrimp, perfect for a comforting meal.

Ingredients

Vegetable Oil

  • 11 tablespoons vegetable oil (divided)

Flour

  • 11 tablespoons flour

Vegetables

  • 1 medium onion (diced)
  • 2 ribs celery (diced)
  • 1 large green pepper (diced)
  • 3 cloves garlic (minced)

Meat and Seafood

  • 1 pound boneless skinless chicken thighs
  • 3/4 pound large shrimp (deveined, shells/tails removed)
  • 3/4 pound Andouille sausage (sliced)

Broth and Seasonings

  • 5 cups low sodium chicken stock (plus more if too thick)
  • 1/4 cup flat leaf parsley (minced)
  • 2 large bay leaves
  • 1 teaspoon filé powder (for serving, optional)
  • 1 tablespoon Cajun seasoning (divided, plus more to taste)

Salt and Pepper

Instructions 

  • Make a dark roux by whisking flour into hot oil and cooking for 40-45 minutes, stirring constantly.
  • Season chicken thighs with Cajun seasoning, sear until browned, then chop into bite-sized pieces.
  • Sear sausage, then add chicken stock to deglaze, scraping brown bits.
  • Add vegetables to the roux and cook until soft, then add garlic and cook until fragrant.
  • Combine chicken, sausage, stock, bay leaves, and seasoning; bring to a boil, then simmer for 45 minutes.
  • Stir in shrimp and parsley, cook 3-4 minutes until shrimp are done, then remove from heat.

Notes

Serve over white rice with green onions, parsley, and a sprinkle of filé powder for authentic flavor.
