Instructions
Make a dark roux by whisking flour into hot oil and cooking for 40-45 minutes, stirring constantly.
Season chicken thighs with Cajun seasoning, sear until browned, then chop into bite-sized pieces.
Sear sausage, then add chicken stock to deglaze, scraping brown bits.
Add vegetables to the roux and cook until soft, then add garlic and cook until fragrant.
Combine chicken, sausage, stock, bay leaves, and seasoning; bring to a boil, then simmer for 45 minutes.
Stir in shrimp and parsley, cook 3-4 minutes until shrimp are done, then remove from heat.
Notes
Serve over white rice with green onions, parsley, and a sprinkle of filé powder for authentic flavor.
