A delicious and creamy chicken salad with sweet grapes and crunchy nuts, perfect for sandwiches or lettuce wraps.

Ingredients

  • 2 cups cooked chicken fillet, chopped or shredded
  • 1 cup red seedless grapes, halved
  • 2 stalks celery, finely diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup chopped toasted pecans or walnuts
  • 1/2 cup mayonnaise
  • 2 tablespoons greek yogurt or sour cream
  • 1 teaspoon dijon mustard
  • 1 teaspoon lemon juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper

Instructions 

  • Combine chicken, grapes, celery, onion, and nuts in a bowl.
  • In another bowl, whisk mayonnaise, yogurt, mustard, lemon juice, salt, and pepper.
  • Pour dressing over chicken mixture and toss gently.
  • Taste and adjust seasoning if needed.
  • Chill before serving. Enjoy on bread, croissants, or greens.

Notes

For added crunch, use toasted nuts.
