A delicious and creamy chicken salad perfect for sandwiches or as a light meal.

Ingredients

Dressing

  • 3/4 cup mayonnaise
  • 1/4 cup plain greek yogurt
  • 1.5 teaspoons dijon mustard

Seasoning

  • 1/4 teaspoon onion powder
  • 1/4 teaspoon coarse salt
  • 1/4 teaspoon pepper

Chicken

  • 4 cups cooked, chopped chicken fillet ((homemade seasoned and baked, or rotisserie))

Add-ins

  • 3/4 cup small diced granny smith apple
  • 1/3 cup dried cranberries
  • 1/4 cup chopped pecans

Instructions 

  • Whisk together mayo, yogurt, mustard, onion powder, salt, and pepper in a large bowl.
  • Add cooled, chopped chicken to the bowl.
  • Gently fold in apple, cranberries, and pecans.
  • Serve as is or on rolls, croissants, or with tomato and lettuce.

Notes

For added flavor, consider using rotisserie chicken.
