Pasta

Chicken Breast

  • 2 large Chicken Breast

Cucumber

Cherry Tomatoes

  • 8 oz Cherry Tomatoes

Red Onion

Red Bell Pepper

Green/Yellow Bell Pepper

Chopped Parsley

  • 1/4 cup Chopped Parsley

Garlic Powder

  • 1.5 teaspoon Garlic Powder

Paprika

  • 1 teaspoon Paprika

Italian Seasoning

  • 1 teaspoon Italian seasoning

Salt

  • 1/2 teaspoon Salt

Pepper

  • 1/4 teaspoon Pepper

Extra Virgin Olive Oil

  • 1/2 cup Extra virgin olive oil

Juice of a Lemon

  • 3-4 tablespoons Juice of a Lemon

Dijon Mustard

  • 1.5 teaspoon Dijon mustard

Garlic Cloves (minced)

  • 3 cloves Garlic cloves (minced)

Honey/Maple Syrup

  • 2 teaspoons Honey/maple syrup

Parmesan Cheese (Finely Grated)

  • 3/4 cup Parmesan cheese (Finely grated)

Salt

  • 3/4 teaspoon Salt

Pepper

  • 1/2 teaspoon Pepper

Instructions 

  • Cook pasta until al dente, then drain and set aside.
  • Grill or cook chicken breasts until fully cooked, then dice.
  • Chop vegetables and herbs, then combine with cooked pasta and chicken in a large bowl.
  • Whisk together olive oil, lemon juice, Dijon mustard, garlic, honey, salt, and pepper to make the dressing.
  • Pour dressing over the salad, add Parmesan cheese, and toss to combine.

Notes

For extra flavor, let the salad chill in the refrigerator for 30 minutes before serving.
