A quick and flavorful homemade chicken fried rice, packed with veggies and savory soy sauce.

soy sauce

low-sodium soy sauce (or tamari)

unsalted butter (divided)

Instructions
Cook chicken in oil with salt and pepper until golden, then set aside.
Sauté onion, garlic, and ginger in butter until fragrant. Add veggies and cook until tender.
Push veggies aside, scramble eggs in the pan, then combine with veggies and chicken.
Add remaining butter and rice, cook undisturbed for 2-3 minutes, then stir to crisp.
Mix in chicken, eggs, veggies, green onions, soy sauce, and stir-fry until heated through. Top with green onions and sriracha if desired.
Notes
Use day-old rice for best texture and flavor.
