A quick and flavorful homemade chicken fried rice, packed with veggies and savory soy sauce.

Ingredients

oil

  • 0.5 tablespoon avocado oil (or olive oil)

chicken

  • 1.25 lbs boneless skinless chicken breast (diced into bite-sized pieces)

vegetables

  • 0.75 teaspoon salt (divided)
  • 0.25 teaspoon black pepper
  • 12 oz frozen mixed veggies (about 3 cups)

eggs

  • 4 units eggs (beaten)

rice

  • 4 cups chilled cooked jasmine rice (about 1 cup uncooked)

soy sauce

  • 0.5 cup low-sodium soy sauce (or tamari)

butter

  • 2 tablespoons unsalted butter (divided)

green onions

  • 0.33 cup sliced green onions (plus more for topping)

optional heat

  • sriracha or red pepper flakes (for heat)

Instructions 

  • Cook chicken in oil with salt and pepper until golden, then set aside.
  • Sauté onion, garlic, and ginger in butter until fragrant. Add veggies and cook until tender.
  • Push veggies aside, scramble eggs in the pan, then combine with veggies and chicken.
  • Add remaining butter and rice, cook undisturbed for 2-3 minutes, then stir to crisp.
  • Mix in chicken, eggs, veggies, green onions, soy sauce, and stir-fry until heated through. Top with green onions and sriracha if desired.

Notes

Use day-old rice for best texture and flavor.
