Instructions
Heat oil in a skillet, cook chicken with half of fajita seasoning until browned.
Add peppers, onion, garlic, remaining seasoning, paprika, salt, and pepper; sauté until vegetables soften.
Stir in tomato paste, rice, broth, and cream; bring to a boil, then simmer covered for 18-20 minutes until rice is tender.
Remove from heat, fluff rice, top with cheese, cover to melt, then garnish with cilantro and serve.
Notes
For extra flavor, add a squeeze of lime before serving.
