A flavorful one-pan dish combining tender chicken, colorful peppers, and seasoned rice topped with melted cheese and fresh cilantro.

Ingredients

Protein

  • 1 pound boneless skinless chicken thighs (cut into bite-sized pieces)

Oil

  • 1 tablespoon olive oil

Vegetables

  • 1 medium red bell pepper (diced)
  • 1 medium green bell pepper (diced)
  • ½ medium yellow onion (diced)
  • 3 cloves garlic (minced)

Seasonings

  • 1 ounce fajita seasoning (1 packet)
  • 1 teaspoon garlic powder
  • 1 tablespoon smoked paprika
  • salt and pepper to taste salt and pepper
  • 1 tablespoon tomato paste

Grains & Liquids

  • 1 cup long-grain white rice (uncooked)
  • 2 cups chicken broth (low-sodium)
  • ½ cup heavy cream
  • 1 cup cheddar cheese (shredded)

Garnish

  • to taste fresh cilantro (chopped (for garnish))

Instructions 

  • Heat oil in a skillet, cook chicken with half of fajita seasoning until browned.
  • Add peppers, onion, garlic, remaining seasoning, paprika, salt, and pepper; sauté until vegetables soften.
  • Stir in tomato paste, rice, broth, and cream; bring to a boil, then simmer covered for 18-20 minutes until rice is tender.
  • Remove from heat, fluff rice, top with cheese, cover to melt, then garnish with cilantro and serve.

Notes

For extra flavor, add a squeeze of lime before serving.
