A flavorful and easy crockpot chicken fajita recipe perfect for a quick weeknight dinner or meal prep.
Ingredients

Rotel
(10 oz can)

honey

minced garlic

sliced bell pepper
(cut in strips)

diced onion

boneless skinless chicken breasts

low sodium taco seasoning

Instructions
Mix Rotel, honey, and garlic in a crockpot.
Layer bell peppers and onion over the mixture.
Add chicken breasts on top and coat with taco seasoning.
Cook on low for 6-8 hours or high for 4 hours until chicken is shredded.
Shred chicken and mix with vegetables and sauce.
Serve warm with tortillas and lime juice.
