A flavorful and easy crockpot chicken fajita recipe perfect for a quick weeknight dinner or meal prep.

Ingredients

Canned Goods

  • 1 can Rotel (10 oz can)
  • 1 tbsp honey
  • 1 tbsp minced garlic
  • 3 cups sliced bell pepper (cut in strips)
  • ½ cup diced onion
  • 2 lbs boneless skinless chicken breasts
  • ¼ cup low sodium taco seasoning
  • limes limes for serving (as needed)

Instructions 

  • Mix Rotel, honey, and garlic in a crockpot.
  • Layer bell peppers and onion over the mixture.
  • Add chicken breasts on top and coat with taco seasoning.
  • Cook on low for 6-8 hours or high for 4 hours until chicken is shredded.
  • Shred chicken and mix with vegetables and sauce.
  • Serve warm with tortillas and lime juice.

Notes

Adjust seasoning to taste and serve with fresh lime for added flavor.
