Chicken Fajita Bowl With Rice and Veggies

A flavorful and colorful bowl combining seasoned chicken, sautéed peppers and onions, fresh veggies, and rice, perfect for a quick and satisfying meal.

Ingredients

Seasoning and Oil

  • 3 tablespoons olive oil (divided, or avocado oil)
  • 1.5 tablespoons taco seasoning (or fajita seasoning)
  • Kosher salt and pepper to taste
  • 2 limes limes (divided)
  • 1 pound boneless skinless chicken breasts (cut into strips)
  • 2 bell peppers bell peppers (any color, seeded and sliced)
  • 1 medium sweet onion (sliced)
  • 3-4 cloves garlic (finely chopped)
  • 0.5 teaspoon cumin
  • 0.5 teaspoon smoked paprika

Veggies and Rice

  • 4 cups chopped romaine
  • 2 cups cooked rice
  • 1 cup shredded cheddar cheese
  • 4 vine tomatoes diced tomatoes
  • 1 large ripe avocado (mashed with texture)
  • Juice of 1 lime lime juice

Notes

  • Kosher salt (to taste)

Instructions 

  • Mix 1.5 tbsp olive oil, taco seasoning, salt, and lime juice. Coat chicken strips and marinate 15-30 mins.
  • Cook chicken in a pan over medium-high heat for 4-5 mins, stir, then cook 8-10 mins until done. Remove and set aside.
  • Sauté peppers and onion in remaining oil for 4-5 mins. Add garlic, cumin, paprika; cook 1 min. Mix in cooked chicken.
  • Roughly mash avocado, mix with lime juice, cumin, salt, and pepper.
  • Assemble bowls with romaine, rice, tomatoes, lime juice, salt, and pepper. Top with chicken mixture, avocado, and cheese.

Notes

For extra flavor, add fresh cilantro or a squeeze of lime before serving.
