A flavorful and colorful bowl combining seasoned chicken, sautéed peppers and onions, fresh veggies, and rice, perfect for a quick and satisfying meal.

(any color, seeded and sliced)

Instructions
Mix 1.5 tbsp olive oil, taco seasoning, salt, and lime juice. Coat chicken strips and marinate 15-30 mins.
Cook chicken in a pan over medium-high heat for 4-5 mins, stir, then cook 8-10 mins until done. Remove and set aside.
Sauté peppers and onion in remaining oil for 4-5 mins. Add garlic, cumin, paprika; cook 1 min. Mix in cooked chicken.
Roughly mash avocado, mix with lime juice, cumin, salt, and pepper.
Assemble bowls with romaine, rice, tomatoes, lime juice, salt, and pepper. Top with chicken mixture, avocado, and cheese.
Notes
For extra flavor, add fresh cilantro or a squeeze of lime before serving.
