A fresh and flavorful salad combining grilled chicken, mozzarella, tomatoes, and basil, drizzled with balsamic glaze for a delightful meal.

Ingredients

Marinade

  • 2 tbsp Balsamic vinegar
  • 1 tbsp Olive oil
  • 1/2 tsp Garlic powder
  • 1 tsp Dried basil
  • 1/2 tsp Dried oregano
  • 1 tsp Sea salt
  • 1/4 tsp Black pepper

Chicken

  • 4 8-oz Boneless skinless chicken breasts

Salad

  • 5 cups Romaine lettuce (chopped)
  • 1 cup Cherry tomatoes (halved)
  • 1/2 cup Fresh mozzarella balls
  • 1/4 cup Fresh basil (cut into ribbons)
  • 1/4 cup Balsamic glaze

Instructions 

  • Whisk together balsamic vinegar, olive oil, garlic powder, basil, oregano, salt, and pepper. Marinate chicken for at least 10 minutes.
  • Cook chicken in air fryer or oven until done, then rest and slice.
  • Combine lettuce, tomatoes, mozzarella, and chicken in a bowl. Top with basil and drizzle with balsamic glaze.

Notes

Use fresh ingredients for best flavor and consider marinating the chicken longer for more tenderness.
