Ingredients

Protein

  • 2 large chicken breasts (skinless, boneless)
  • 2 tablespoons olive oil
  • 1 medium lemon (juice of 1 medium lemon (about 2 tablespoons))
  • 1 teaspoon dried oregano
  • 0.5 teaspoon garlic powder
  • 0.5 teaspoon Kosher salt
  • 0.25 teaspoon ground black pepper
  • 4 cups chopped romaine lettuce
  • 1 cup cherry tomatoes, halved
  • 0.5 cup shredded or grated parmesan cheese (plus more to taste)
  • 0.75 cup store-bought croutons (plus more to taste)
  • to taste store-bought caesar dressing
  • 6 large flour tortillas

Instructions 

  • Pound chicken to ¾ inch thick, then marinate with lemon juice, olive oil, oregano, garlic powder, salt, and pepper for 10-15 minutes.
  • Cook chicken in a skillet over medium heat for 6-8 minutes per side until cooked through. Rest, then dice.
  • Mix diced chicken, lettuce, tomatoes, parmesan, croutons, and dressing in a bowl. Toss to combine.
  • Warm tortillas in microwave for 10-15 seconds.
  • Assemble wraps by placing filling on tortillas, fold sides, and roll tightly.
  • Optional: Toast wraps in a skillet with butter or oil for 2-3 minutes per side until golden.

Notes

For extra flavor, add more parmesan or croutons as desired.
