A fresh and flavorful salad combining grilled chicken, creamy avocados, and sweet corn, perfect for a quick and healthy meal.

Ingredients

Protein

  • 1 pound boneless skinless chicken breasts

Spices and seasonings

  • 1.5 teaspoons chili powder
  • 0.5 teaspoon cumin
  • 0.5 teaspoon garlic powder
  • Salt and freshly ground black pepper to taste Salt and pepper

Vegetables and fruits

  • 2 cups corn
  • 2 medium avocados (diced)
  • 1 Jalapeño seeded and diced
  • 0.5 cup diced red onion
  • 0.25 cup chopped cilantro

Dressing

  • 1.5 tablespoons olive oil
  • 1.5 tablespoons honey
  • 0.25 cup lime juice
  • 1 teaspoon chili powder
  • 0.5 teaspoon ground cumin
  • Salt and freshly ground black pepper to taste Salt and pepper

Instructions 

  • Preheat grill to medium-high. Season chicken with spices, salt, and pepper. Grill until cooked through, then rest and dice.
  • Mix dressing ingredients in a jar and shake until combined.
  • Combine corn, avocado, red onion, jalapeño, cilantro, and chicken in a bowl. Toss with vinaigrette and season to taste.

Notes

For extra flavor, marinate the chicken with spices before grilling.
