Instructions
Preheat oven to 400°F (200°C). Prepare a baking dish.
Marinate chicken with olive oil, garlic, Italian seasoning, salt, and pepper for 15-30 minutes.
Sauté spinach in remaining olive oil until wilted. Mix with softened cream cheese, mozzarella, and Parmesan.
Sear chicken briefly if desired, then arrange in baking dish. Spread spinach mixture over chicken and top with remaining cheese.
Bake for 20-30 minutes until cooked through and cheese is golden. Let rest 5 minutes before serving.
