A comforting and hearty chicken and rice soup perfect for any season. Easy to prepare with simple ingredients for a nourishing meal.

onion, diced

carrot, diced

celery, diced
Aromatics

garlic, chopped

thyme, chopped
(or 1 teaspoon dried thyme)
Broth and Rice

chicken broth or chicken stock

boneless and skinless chicken breasts or thighs

bay leaves
bay leaves (optional)

jasmine rice (or other long grained rice)

lemon juice

parsley, chopped (optional)
Seasoning
to taste
salt and pepper
Instructions
Heat oil in a large saucepan, cook onions, carrots, and celery until tender.
Add garlic and thyme; cook until fragrant.
Add broth, chicken, bay leaves, and rice; bring to boil, then simmer until chicken is cooked and rice is tender (~20 min).
Remove chicken and bay leaf, shred chicken, return to soup.
Add lemon juice and parsley, season with salt and pepper.
Notes
For extra flavor, use homemade broth and fresh herbs.
