Instructions
Sauté vegetables and garlic in butter until tender.
Add flour and cook for 1-2 minutes to make a roux.
Gradually add chicken stock and evaporated milk, stirring until smooth. Add chicken, thyme, salt, and pepper. Simmer for 20 minutes.
Mix dumpling ingredients to form batter.
Drop spoonfuls of batter into simmering soup and cook for 10 minutes until dumplings are fluffy.
Notes
For a richer flavor, use homemade chicken stock and fresh herbs.
