Instructions
Mix dry ingredients; set aside. Drain moisture from pumpkin by pressing with paper towels.
Cream butter and sugars; add pumpkin, vanilla, and egg. Mix well.
Combine dry and wet ingredients; chill dough for 10 minutes.
Shape dough into balls, roll in cinnamon sugar, place on baking sheets, and flatten slightly. Bake at 350°F (175°C) for 13-15 minutes.
Cool cookies for 5 minutes before transferring to a rack.
Notes
For softer cookies, slightly underbake and let sit for a few minutes.
