A delicious low-carb casserole featuring flavorful meatballs topped with melty cheese and fresh basil.

Ingredients

Meat

  • 2 lb ground beef
  • 1/2 cup grated parmesan cheese
  • 3/4 cup shredded mozzarella cheese
  • 1 egg egg
  • 1/4 cup grated onion
  • 3 cloves garlic (minced)
  • 3 tablespoons chopped fresh parsley
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon Italian seasoning

Seasonings

  • Salt and pepper Salt and pepper (to taste)
  • 3 cups marinara sauce
  • 1/2 cup ricotta cheese
  • 1/2 cup shredded mozzarella cheese
  • 2 to 3 Tbsp fresh basil (chopped)

Instructions 

  • Preheat oven to 400°F (200°C).
  • Mix ground beef, cheeses, egg, onion, garlic, parsley, and seasonings. Form into 15-16 meatballs and place on a baking sheet.
  • Bake for 20-25 minutes until cooked. Drain excess grease and transfer to a baking dish.
  • Top with marinara, dollop ricotta, sprinkle mozzarella, and bake for 15 minutes until bubbly.
  • Garnish with fresh basil and serve.

Notes

Use fresh basil for best flavor and adjust seasoning to taste.
