Ingredients

  • 2 cups cooked chicken (shredded or cubed)
  • 1 cup uncooked white rice (or 3 cups cooked rice) (Use cooked rice if preferred)
  • 2 cups chicken broth (Needed if using uncooked rice)

Vegetables

  • 2 cups broccoli (chopped into bite-sized pieces)

Dairy & Fats

  • 1 cup shredded cheddar cheese (Plus extra for topping)
  • ½ cup milk

Aromatics & Seasonings

  • 1 small onion (chopped)
  • 2 cloves garlic (minced)
  • 1 tablespoon butter or olive oil
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon paprika (optional) (For extra flavor)
  • ½ teaspoon garlic powder (optional) (For more depth)

Instructions 

  • If using uncooked rice, cook it with broth until absorbed, then set aside. In a skillet, sauté onion in butter/oil, add garlic, then steam broccoli. Mix in chicken and rice, then stir in milk and cheese until melted. Season with salt, pepper, paprika, and garlic powder. Top with extra cheese, cover briefly, then serve.

Notes

For a creamier texture, use more cheese or milk as desired.
