Instructions
Preheat oven to 375°F (190°C) and lightly grease a baking dish.
In a saucepan, combine chicken, broth, milk, cream cheese, and sour cream; stir until smooth.
Stir in garlic, onion powder, garlic powder, paprika, thyme, salt, and pepper; simmer 2–3 minutes.
Mix cooked rice, chicken, broccoli, and 1½ cups cheddar cheese; pour sauce over and stir.
Transfer to baking dish, top with remaining cheese and mozzarella, then bake 20–25 minutes until bubbly and golden.
Garnish with fresh parsley and serve warm.
Notes
For extra flavor, add a pinch of red pepper flakes or a sprinkle of extra cheese before baking.
