Cheesy Chicken Broccoli Rice Bake

A creamy, cheesy baked dish combining tender chicken, broccoli, and rice for a comforting meal.

Ingredients

Rice

  • 2 cups white rice (cooked, jasmine or long grain)

Chicken

  • 2 cups chicken breast (cooked, chopped or shredded)

Broccoli

  • 2 cups broccoli florets (fresh & lightly steamed)

Cheddar Cheese

  • 2 cups cheddar cheese (shredded & divided)

Mozzarella

  • 0.5 cups mozzarella (shredded, for extra melt)

Other ingredients

  • 1 cup chicken broth
  • 1 cup milk (whole milk recommended)
  • 0.5 cup sour cream
  • 4 oz cream cheese (softened)
  • 2 cloves garlic (minced)
  • 0.5 tsp onion powder
  • 0.5 tsp garlic powder
  • 0.5 tsp smoked paprika
  • 0.5 tsp salt (or to taste)
  • 0.25 tsp black pepper
  • 0.5 tsp dried parsley
  • 0.5 tsp dried thyme (adds depth)
  • 1 tbsp butter (melted)
  • 1 tbsp parsley (fresh, chopped for garnish)

Instructions 

  • Preheat oven to 375°F (190°C) and lightly grease a baking dish.
  • In a saucepan, combine chicken, broth, milk, cream cheese, and sour cream; stir until smooth.
  • Stir in garlic, onion powder, garlic powder, paprika, thyme, salt, and pepper; simmer 2–3 minutes.
  • Mix cooked rice, chicken, broccoli, and 1½ cups cheddar cheese; pour sauce over and stir.
  • Transfer to baking dish, top with remaining cheese and mozzarella, then bake 20–25 minutes until bubbly and golden.
  • Garnish with fresh parsley and serve warm.

Notes

For extra flavor, add a pinch of red pepper flakes or a sprinkle of extra cheese before baking.
