2piecesred onion(sliced into wedges)
2tbspolive oil (divided)
3piecescorn(ears of corn, husked)
200gred grape tomatoes
200gyellow grape tomatoes
1pieceavocado(ripe)
ΒΌbunchcilantro (coriander)(chopped)

2tsplemon juice(freshly squeezed)
1tbspDijon mustard

Instructions
Preheat grill or grill pan. Toss corn and red onion with 1 tbsp olive oil, then char until grill marks appear, about 5-7 minutes for corn and 10 minutes for onions.
Remove corn and onions from heat, then cut corn kernels off the cob and chop onions.
In a small bowl, whisk together lemon juice, Dijon mustard, maple syrup, 1 tbsp olive oil, salt, and pepper to make the dressing.
In a large bowl, combine charred corn, roasted onions, tomatoes, avocado, and cilantro. Drizzle with dressing and toss gently.
Serve immediately or chilled for later.
Notes
For extra smoky flavor, char the vegetables over an open flame if available.
