Ingredients

Vegetables

  • 2 cups carrots (peeled and julienned or grated)
  • 2 cups cucumbers (sliced thin or grated)
  • 3 tablespoons white vinegar (can substitute rice vinegar)
  • 1 tablespoon honey or sugar (for sweetness)
  • 1 tablespoon soy sauce (optional for added umami)
  • 1 teaspoon salt (to taste)
  • 0.5 teaspoon black pepper (freshly ground)

Instructions 

  • Peel and julienne or grate the carrots; slice or grate the cucumbers.
  • Combine vegetables in a bowl.
  • Whisk together vinegar, honey, soy sauce, salt, and pepper to make the dressing.
  • Pour dressing over vegetables and toss to coat.
  • Chill for at least 10 minutes before serving.

Notes

For extra flavor, add chopped fresh herbs like cilantro or mint.
