A refreshing and colorful salad combining the sweetness of apples and carrots with a creamy dressing.
Ingredients

lemon juice

matchstick carrots
(can be precut)

yellow onion, finely diced

dried sweetened cranberries

vanilla yogurt

canned mandarin segments, drained
Instructions
Cut apples matchstick style and place in a bowl.
Pour lemon juice over apples and toss to coat.
Let apples soak for 5 minutes to prevent browning.
Combine carrots, onion, cranberries, and apples in a bowl.
Add yogurt, mayo, sugar, salt, and pepper; stir well.
Fold in mandarins, cover, and refrigerate for 3 hours.
Notes
For extra crunch, add nuts or seeds.
