Ingredients

Meat

  • 1.5 lbs flank or skirt steak
  • 2 tablespoons olive oil
  • Juice of 2 limes lime juice
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • ½ teaspoon smoked paprika
  • Salt & black pepper to taste Salt & black pepper

Tortillas

  • 6 small corn tortillas

Toppings

  • ½ cup white onion, finely diced
  • ½ cup fresh cilantro, chopped
  • Lime wedges for serving

Instructions 

  • Whisk olive oil, lime juice, garlic, cumin, chili powder, paprika, salt, and pepper. Marinate steak for at least 30 minutes.
  • Preheat grill or skillet over high heat. Pat steak dry and cook 3-5 minutes per side. Rest for 5-7 minutes, then slice thinly against the grain.
  • Warm tortillas over heat. Fill with sliced steak, diced onion, cilantro, and a squeeze of lime.

Notes

Marinate the steak longer for more flavor, and serve with extra lime wedges for added zest.
