115gcastor sugar
2tablespoonsapple cider vinegar or lemon juice
1tablespoonvanilla extract or vanilla bean paste

250gsalted butter, chopped
250gplain/all-purpose flour
100grolled oats
150gbrown sugar, firmly packed
1tablespoonground cardamom
2teaspoonsfennel seeds, roughly ground
150gwhite chocolate, chopped

Instructions
Preheat oven to 180°C/350°F. Arrange apple slices in a baking dish with sugar, vinegar, vanilla, and salt.
Brown the butter: melt in a pan, then cook until deep golden brown, scraping bits from the bottom. Cool slightly.
Mix flour, oats, brown sugar, cardamom, fennel seeds, cooled browned butter, and white chocolate to form crumble topping. Scatter over apples.
Bake for 45 minutes, then rest for 15 minutes before serving. Serve with ice cream or cream.
