Ingredients

Fruits

  • 700-800 g Granny Smith apples, peeled, cored, and sliced
  • 115 g castor sugar
  • 2 tablespoons apple cider vinegar or lemon juice
  • 1 tablespoon vanilla extract or vanilla bean paste
  • Pinch sea salt
  • 250 g salted butter, chopped
  • 250 g plain/all-purpose flour
  • 100 g rolled oats
  • 150 g brown sugar, firmly packed
  • 1 tablespoon ground cardamom
  • 2 teaspoons fennel seeds, roughly ground
  • 150 g white chocolate, chopped

To serve

  • vanilla ice cream or double cream

Instructions 

  • Preheat oven to 180°C/350°F. Arrange apple slices in a baking dish with sugar, vinegar, vanilla, and salt.
  • Brown the butter: melt in a pan, then cook until deep golden brown, scraping bits from the bottom. Cool slightly.
  • Mix flour, oats, brown sugar, cardamom, fennel seeds, cooled browned butter, and white chocolate to form crumble topping. Scatter over apples.
  • Bake for 45 minutes, then rest for 15 minutes before serving. Serve with ice cream or cream.

Notes

Ensure to brown the butter carefully to develop rich flavor.
