A flavorful and comforting dish featuring caramelised soy chicken served over fragrant jasmine rice with a savory garlic ginger broth.

Ingredients

Protein

  • 1.5 lbs boneless skinless chicken thighs

Sauces and Oils

  • 1/4 cup soy sauce
  • 3 tbsp brown sugar
  • 1 tbsp sesame oil

Aromatics

  • 4 cloves garlic, minced
  • 2 inch fresh ginger, sliced

Broth and Rice

  • 4 cups chicken broth
  • 1 cup jasmine rice

Garnishes

  • 2 green onions sliced
  • 1 tbsp vegetable oil

Seasoning

  • to taste Salt and pepper

Instructions 

  • Cook jasmine rice according to package instructions and set aside.
  • Marinate chicken thighs in soy sauce, brown sugar, and sesame oil for at least 15 minutes.
  • Heat vegetable oil and sear chicken until caramelised, then set aside.
  • Sauté garlic and ginger, add broth, then return chicken and simmer for 15-20 minutes.
  • Serve chicken and broth over rice, garnished with green onions.
