A fresh and vibrant Caprese salad drizzled with a rich balsamic reduction.

Ingredients

  • 16 ounces fresh mozzarella cheese (sliced)
  • 3-4 pieces vine ripe tomatoes (sliced)
  • cup fresh basil leaves
  • flaked sea salt
  • ground pepper
  • 1 drizzle olive oil
  • 1 cup balsamic vinegar
  • 1 tablespoon allulose confectioners (optional)

Instructions 

  • Combine balsamic vinegar and allulose in a saucepan, whisk, and simmer on low for 12-15 minutes until reduced by half.
  • Wash and slice tomatoes, mozzarella, and prepare basil leaves.
  • Layer tomato slices on a plate, alternating with mozzarella and basil.
  • Drizzle with olive oil, add pepper and sea salt, then drizzle cooled balsamic reduction on top.
  • Serve immediately and store leftovers in an airtight container.

Notes

Store any leftover balsamic reduction in an airtight jar for up to 1 month.
