A fresh and vibrant Caprese salad drizzled with a rich balsamic reduction.

Instructions
Combine balsamic vinegar and allulose in a saucepan, whisk, and simmer on low for 12-15 minutes until reduced by half.
Wash and slice tomatoes, mozzarella, and prepare basil leaves.
Layer tomato slices on a plate, alternating with mozzarella and basil.
Drizzle with olive oil, add pepper and sea salt, then drizzle cooled balsamic reduction on top.
Serve immediately and store leftovers in an airtight container.
Notes
Store any leftover balsamic reduction in an airtight jar for up to 1 month.
