A fresh and flavorful pasta salad combining the classic flavors of Caprese with vibrant basil pesto, perfect for a quick lunch or side dish.

Ingredients

Pasta

  • 12 oz rotini pasta

Vegetables and cheese

  • 1 cup cherry tomatoes, halved
  • 1 cup mozzarella pearls

Sauces and oils

  • 1/2 cup homemade or store-bought basil pesto
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons balsamic glaze

Herbs and seasonings

  • 1/4 cup fresh basil leaves, chopped

Instructions 

  • Cook the pasta until al dente, then rinse with cold water and drain.
  • Combine cooked pasta, cherry tomatoes, and mozzarella in a large bowl.
  • Add pesto and olive oil, then toss to coat evenly.
  • Season with salt and black pepper to taste.
  • Drizzle with balsamic glaze, sprinkle with chopped basil, then chill before serving.

Notes
