A flavorful one-pan dish combining smoky sausage, colorful peppers, and seasoned rice for a quick and satisfying meal.

Ingredients

Meat

  • 12 oz Smoked Sausage such as Andouille or Kielbasa (sliced into ½-inch rounds)
  • 1 cup Rice (long-grain white rice, rinsed)
  • 1 each Bell Pepper (red) (diced)
  • 1 each Bell Pepper (green) (diced)
  • 1 medium Onion (yellow or white) (diced)
  • 3 cloves Garlic (minced)
  • 1.5 cups Chicken Broth
  • 2 tbsp Cajun Seasoning (store-bought or homemade)
  • 1 tbsp Olive Oil
  • to taste Salt and Pepper Salt and Pepper
  • optional Fresh Parsley (for garnish)
  • optional Green Onions (for garnish)
  • optional Hot Sauce (for serving)

Instructions 

  • Heat olive oil in a large skillet over medium heat. Add sliced sausage and cook until browned, about 5 minutes.
  • Add diced onions and peppers; cook until softened, about 5 minutes. Stir in garlic and cook for 1 minute.
  • Add rice, Cajun seasoning, salt, and pepper; stir to coat. Pour in chicken broth and bring to a boil.
  • Reduce heat to low, cover, and simmer for 15 minutes until rice is cooked and liquid is absorbed.
  • Garnish with parsley and green onions. Serve with hot sauce if desired.

Notes

Adjust seasoning to taste and add hot sauce for extra flavor.
