Instructions
Heat olive oil in a large skillet over medium heat. Add sliced sausage and cook until browned, about 5 minutes.
Add diced onions and peppers; cook until softened, about 5 minutes. Stir in garlic and cook for 1 minute.
Add rice, Cajun seasoning, salt, and pepper; stir to coat. Pour in chicken broth and bring to a boil.
Reduce heat to low, cover, and simmer for 15 minutes until rice is cooked and liquid is absorbed.
Garnish with parsley and green onions. Serve with hot sauce if desired.
Notes
Adjust seasoning to taste and add hot sauce for extra flavor.
