A flavorful and hearty Cajun jambalaya combining chicken, shrimp, and sausage for a satisfying meal with bold spices.

Ingredients

Vegetables and Aromatics

  • 2 tablespoons vegetable oil
  • 1 pound boneless, skinless chicken breast, cut into bite-sized pieces
  • 1 pound smoked sausage (such as Andouille), sliced
  • 0.5 pound shrimp, peeled and deveined
  • 1 medium onion, diced
  • 1 green bell pepper diced
  • 1 red bell pepper diced
  • 2 stalks celery, diced
  • 3 cloves garlic, minced
  • 1 14.5 oz can diced tomatoes
  • 1.5 cups long-grain white rice, rinsed
  • 3 cups chicken broth
  • 2 teaspoons Cajun seasoning
  • 1 teaspoon smoked paprika
  • 0.5 teaspoon dried thyme
  • 0.5 teaspoon dried oregano

Salt and black pepper

  • to taste Salt and black pepper
  • 2 green onions sliced (for garnish)
  • Fresh parsley chopped (for garnish)
  • Optional sliced jalapeños for heat

Instructions 

  • Heat 1 tablespoon of oil, cook chicken until browned, then set aside.
  • Cook sausage until browned, then set aside.
  • Sauté onion, peppers, celery, and garlic until softened.
  • Stir in spices, tomatoes, then add rice and coat well.
  • Add broth, simmer covered for 20 minutes, then stir in chicken, sausage, and shrimp. Cook until shrimp is pink, about 5-7 minutes. Garnish and serve.

Notes

Adjust seasoning and heat level with jalapeños as desired.
