A flavorful and hearty Cajun-inspired dish combining chicken, sausage, and rice for a satisfying meal.

Ingredients

Oil

  • 2 tablespoons neutral oil (vegetable, avocado, or olive)

Sausage

  • 12 ounces andouille sausage, sliced into ¼-inch rounds

Chicken

  • 1 pound boneless skinless chicken thighs, cut into 1-inch chunks

Seasoning

  • 2 teaspoons Cajun or Creole seasoning, divided

Vegetables

  • 1 large yellow onion, diced
  • 1 large green bell pepper, diced
  • 2 stalks celery, diced
  • 4 cloves garlic, minced
  • 2 bay leaves bay leaves
  • ½ teaspoon dried thyme
  • 2 tablespoons tomato paste
  • 1 (14.5 oz) can can diced tomatoes, undrained
  • 2 cups low-sodium chicken broth
  • 1 ½ cups long-grain white rice
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper

Green onions

  • 3 green onions thinly sliced

Hot sauce

  • optional hot sauce (for serving)

Instructions 

  • Heat oil in a Dutch oven, cook sausage until browned, then transfer to a bowl.
  • Season chicken with 1 teaspoon Cajun seasoning, sear until browned, then combine with sausage.
  • Sauté vegetables, add garlic and remaining seasoning, cook until fragrant.
  • Stir in tomato paste, add tomatoes, broth, bay leaves, thyme, salt, and pepper, bring to a boil.
  • Add rice and return chicken and sausage, simmer covered for 20-25 minutes, then rest for 10 minutes.

Notes

Use fresh ingredients for best flavor and adjust seasoning to taste.
