Instructions
Heat oil in a Dutch oven, cook sausage until browned, then transfer to a bowl.
Season chicken with 1 teaspoon Cajun seasoning, sear until browned, then combine with sausage.
Sauté vegetables, add garlic and remaining seasoning, cook until fragrant.
Stir in tomato paste, add tomatoes, broth, bay leaves, thyme, salt, and pepper, bring to a boil.
Add rice and return chicken and sausage, simmer covered for 20-25 minutes, then rest for 10 minutes.
