A quick and flavorful stir-fry combining tender chicken, fresh vegetables, and a creamy peanut sauce served over brown rice.

long grain brown rice (uncooked)

Tamari sauce

Instructions
Cook brown rice in water until tender, then set aside.
Cut chicken into ½ inch pieces. Stir-fry in 1 tbsp oil until cooked through, then set aside.
Whisk together Tamari, mustard, sesame oil, peanut butter, and warm water to make sauce.
Stir-fry garlic and vegetables until tender-crisp, then add sauce and cook 2 minutes. Return chicken to pan and heat through.
Serve stir-fry over rice, garnished with green onions and sesame seeds.
Notes
For extra flavor, add a splash of lime juice before serving.
