These flavorful enchiladas combine roasted butternut squash and black beans for a hearty vegetarian meal with a spicy, cheesy topping.

4cupsbutternut squash (peeled and diced)
2Tablespoonsolive oil
1/2teaspoonkosher salt
1/4teaspoonblack pepper
3clovesgarlic (pressed)
1/2mediumonion (diced)
1canblack beans, rinsed and drained (15 ounce)
2cupsenchilada sauce (divided)
2teaspoonscumin
1cupjack cheese (shredded)
Instructions
Mix squash with olive oil, salt, pepper, garlic, and onion; roast at 450°F (230°C) for 20 minutes, turning halfway.
Combine roasted veggies with black beans and cumin in a large bowl.
Spread 1/4 cup enchilada sauce in a baking dish; fill tortillas with squash mixture, roll up, and place in dish. Cover with remaining sauce and cheese.
Bake at 350°F (175°C) for 30 minutes, then uncover and bake 10 more minutes to melt cheese.
Serve hot and enjoy!
