Ingredients

Pasta Salad Ingredients

  • 2 cups small pasta shape, dry
  • 680 grams cherry tomatoes, halved (approx. 24 ounces)
  • 4 cloves garlic, minced
  • 1/2 small shallot, chopped
  • 180 grams mini bocconcini (mozzarella balls), halved (approx. 6 ounces)
  • 28 grams fresh basil leaves, chopped (approx. 1 ounce)
  • 2 tbsp olive oil
  • 2 tbsp red wine vinegar
  • salt + pepper, to taste
  • 2 large slices sourdough bread (or other bread of choice)
  • 1.5 tsp olive oil
  • 1 tsp garlic powder (optional)

Instructions 

  • Cook pasta according to package directions, then drain.
  • Combine tomatoes, garlic, shallot, bocconcini, olive oil, vinegar, basil, and seasoning in a bowl.
  • Toast bread, then process into crumbs and sauté with olive oil and garlic powder until crunchy.
  • Add drained pasta and breadcrumbs to the salad, toss to combine, and adjust seasoning.
