Ingredients

Butter

  • 227 grams unsalted butter (2 sticks)
  • 100 grams granulated sugar (1/2 cup)
  • 200 grams dark brown sugar (1 cup)
  • 190 grams all-purpose flour (1 1/2 cups)
  • 127 grams bread flour (1 cup)
  • 1 teaspoon baking soda
  • 0.5 teaspoon baking powder
  • 1 teaspoon fine sea salt
  • 1 teaspoon instant espresso powder (optional)
  • 2 large eggs (plus 1 yolk)
  • 2 teaspoons vanilla extract
  • 283 grams semisweet chocolate (10 ounces, chopped)
  • 1 cup toffee bits (homemade or Heath brand)

Toppings

  • to taste flaky sea salt (for finishing)
  • 0.5 cup toasted chopped pecans or walnuts (optional)
  • 0.5 cup chopped white chocolate (optional)
  • a few large chocolate chunks (to press into tops before baking)
  • 1 teaspoon cinnamon (optional)
  • 1 teaspoon almond extract (optional)

Instructions 

  • Melt the butter in a pan until golden and nutty, then cool.
  • Mix in sugars, then add eggs, yolk, and vanilla; cool the mixture.
  • Whisk dry ingredients separately, then fold into wet mixture.
  • Fold in chocolate and toffee bits, then chill for 24 hours.
  • Preheat oven, scoop dough, bake at 350°F for 12-14 minutes, then salt and cool.

Chilling the dough enhances flavor and texture. Feel free to customize toppings.
