Ingredients

Dough

  • 0.5 cup unsalted butter (for browning)
  • 1 cup whole milk (warmed to 115-120°F)
  • 0.5 cup granulated sugar (divided)
  • 2.25 teaspoons active dry or instant yeast
  • 1 large egg (plus 1 egg yolk)
  • 0.75 cup pumpkin puree
  • 4.75 cups all-purpose flour (plus more for dusting)
  • 1 teaspoon kosher salt

Filling

  • 1 cup packed dark brown sugar
  • 0.25 cup pumpkin puree
  • 1 tablespoon ground cinnamon
  • 1 tablespoon pumpkin pie spice
  • 0.25 cup unsalted butter (softened)

Icing

  • 8 oz full-fat cream cheese (softened)
  • 0.25 cup unsalted butter (softened)
  • 0.25 cup powdered sugar
  • 2 teaspoons vanilla essence (or vanilla bean paste)
  • 0.5 teaspoon pumpkin pie spice

Instructions 

  • Brown the butter in a saucepan until deep golden and nutty, then cool.
  • Activate yeast by mixing warm milk with sugar, then add remaining ingredients and knead until smooth. Let rise until doubled.
  • Prepare filling by mixing brown sugar, pumpkin, cinnamon, and spice. Roll out dough, spread butter and filling, then roll and cut into 12 pieces.
  • Arrange rolls in a pan, pour heavy cream over, and chill while preheating oven to 350°F. Bake for 30 minutes until golden.
  • Mix cream cheese, butter, powdered sugar, vanilla, and spice for icing. Spread over warm rolls and serve immediately.
