Instructions
Cook the butter until deeply golden and nutty, then cool for 15 minutes.
Mix browned butter with sugars, then add egg, yolk, banana purée, and vanilla.
Combine dry ingredients and fold into wet mixture, then stir in oats and chocolate chips.
Chill dough for at least 4 hours, then scoop onto a baking sheet and bake at 350°F (175°C) for 11–13 minutes.
Prepare buttercream by beating butter, sugars, vanilla, and cream until fluffy, then assemble cookies with buttercream filling.
Notes
Chilling the dough overnight enhances flavor and texture. Store assembled pies in an airtight container at room temperature for up to 24 hours.
