Ingredients

Dough

  • 1 cup unsalted butter
  • 1 cup light brown sugar (packed)
  • 0.5 cup granulated sugar
  • 1 large egg (room temperature)
  • 1 large egg yolk (room temperature)
  • 0.33 cup very ripe banana purée
  • 2 tsp vanilla extract
  • 1.5 cups all-purpose flour
  • 1 tsp baking soda
  • 0.5 tsp baking powder
  • 1 tsp kosher salt
  • 0.5 tsp cinnamon
  • 2 cups old-fashioned oats
  • 0.75 cup mini chocolate chips

Buttercream Filling

  • 0.75 cup unsalted butter (room temperature)
  • 0.75 cup light brown sugar
  • 0.75 cup powdered sugar
  • 1.5 tsp vanilla extract
  • 0.25 tsp kosher salt
  • 4 tbsp heavy cream (divided)

Instructions 

  • Cook the butter until deeply golden and nutty, then cool for 15 minutes.
  • Mix browned butter with sugars, then add egg, yolk, banana purée, and vanilla.
  • Combine dry ingredients and fold into wet mixture, then stir in oats and chocolate chips.
  • Chill dough for at least 4 hours, then scoop onto a baking sheet and bake at 350°F (175°C) for 11–13 minutes.
  • Prepare buttercream by beating butter, sugars, vanilla, and cream until fluffy, then assemble cookies with buttercream filling.

Notes

Chilling the dough overnight enhances flavor and texture. Store assembled pies in an airtight container at room temperature for up to 24 hours.
