Ingredients

Dough

  • 2 1/2 cups all-purpose flour
  • 1 cup cold butter (cut into 1/2-inch pieces)
  • 2 teaspoons sugar
  • 1 teaspoon kosher salt (use less if using table salt)
  • 1/2 cup cold water

Filling

  • 4 medium apples (about 1 1/2 lbs./680g total)
  • 1/4 cup butter (1/2 stick)
  • 1/2 cup packed brown sugar
  • 2 teaspoons cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon ground clove
  • 1/2 teaspoon salt
  • 2 tablespoons flour
  • 2 tablespoons water
  • 1 tablespoon fresh lemon juice
  • 1 Egg (for egg wash)
  • 1 tablespoon Water (for egg wash)

Instructions 

  • Prepare the dough by mixing flour, salt, sugar, and cold butter until crumbly, then add cold water to form a dough. Chill for 30 minutes.
  • Meanwhile, peel and slice apples, then cook with butter, brown sugar, cinnamon, nutmeg, clove, salt, lemon juice, and flour until tender. Let cool.
  • Roll out dough and cut into circles. Fill each with apple filling, fold, and seal edges.
  • Brush pies with egg wash made from egg and water. Cut small slits on top for steam.
  • Bake at 375°F (190°C) for 20 minutes until golden brown.

Notes

Chill the dough thoroughly for best results and ensure apples are cooked until tender for optimal filling.
