A refreshing and nutritious broccoli salad perfect for any occasion.

Ingredients

Vegetables

  • 4 cups fresh broccoli, cut into bite-size pieces
  • 1/2 cup finely chopped red onion
  • 1/2 cup dried cranberries
  • 1/2 cup roasted sunflower seeds
  • 1/2 cup mayonnaise (or part plain greek yogurt)
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey
  • 1 teaspoon dijon mustard
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions 

  • Combine broccoli, red onion, cranberries, and sunflower seeds in a bowl.
  • Whisk mayonnaise, vinegar, honey, mustard, salt, and pepper in a separate bowl.
  • Pour dressing over broccoli mixture and toss to coat.
  • Cover and chill in the refrigerator for 1 to 2 hours.
  • Stir again before serving and adjust seasoning if needed.

Notes

For a lighter version, substitute part of the mayonnaise with Greek yogurt.
