Ingredients

Dressing

  • 3 tablespoons mayonnaise
  • 1 tablespoon olive oil
  • 1 tablespoon lime juice
  • 1 teaspoon Dijon mustard
  • ¼ teaspoon fine sea salt
  • 1 shallot shallot, sliced thinly
  • 1 pound broccoli florets (cut into 1-inch pieces)
  • 1 apple apple (any eating variety), chopped
  • ¼ cup slivered almonds, toasted
  • ½ cup pomegranate arils

Instructions 

  • Whisk together mayonnaise, olive oil, lime juice, mustard, salt, and shallot in a large bowl.
  • Add broccoli and apple, then toss to coat.
  • Transfer to a serving bowl.
  • Sprinkle with toasted almonds and pomegranate arils.
  • Serve immediately.

Notes

For extra crunch, toast the almonds until golden.
