A vibrant and fresh pasta salad combining colorful vegetables, cheese, and a flavorful pesto dressing, perfect for a quick lunch or side dish.

Ingredients

Dry ingredients

  • 12 ounces bow tie pasta
  • 2 cups cherry tomatoes (halved)
  • 0.25 cup red onion (diced)
  • 1 cup bocconcini cheese (halved)
  • 1 cup spinach (finely chopped)
  • 0.5 cup basil (finely chopped)
  • 3 tablespoons pesto
  • 2 tablespoons olive oil
  • 0.5 lemon lemon juice
  • to taste Salt
  • to taste Black pepper

Instructions 

  • Cook the pasta in salted boiling water until al dente, then drain and cool.
  • Mix pesto, olive oil, and lemon juice to make the dressing.
  • Combine cooled pasta with tomatoes, onion, cheese, spinach, and basil in a large bowl.
  • Pour dressing over the salad, season with salt and pepper, and toss gently.
  • Serve immediately or refrigerate for up to 5 days.

Notes

For extra flavor, add a sprinkle of grated Parmesan before serving.
