Ingredients

Salmon

  • 2-4 fillets salmon filets
  • 3/4 cup bourbon
  • 1/4 cup lower-sodium soy sauce
  • 1/4 cup light brown sugar (lightly packed)
  • 1 tablespoon fresh minced garlic (roughly 3 medium cloves)
  • 1 tablespoon freshly grated ginger (generally a 1-inch piece)
  • 1 unit lime (juice of 1 lime)
  • 1/4 teaspoon fresh ground black pepper (a few turns of a grinder)
  • 1 tablespoon olive oil
  • Optional garnish green onions or chives, lime or lemon wedges (for garnish)

Instructions 

  • Whisk bourbon, soy sauce, and brown sugar until dissolved; stir in ginger, garlic, black pepper, and lime juice.
  • Pour marinade into a dish, add salmon, then cover and refrigerate for 2 hours.
  • Preheat oven to 400°F (200°C). Heat a skillet over high, add oil, then sear salmon 2 minutes per side.
  • Transfer skillet to oven, roast for 3-7 minutes depending on thickness, then rest briefly.
  • Remove skin if desired, garnish with green onions and lime wedges, then serve.

Notes

Ensure not to overcook the salmon for best tenderness and flavor.
