A fresh and vibrant salad combining black beans, corn, cherry tomatoes, and creamy avocado, perfect for a quick, healthy meal or side dish.

Ingredients

Canned Goods

  • 30 ounces black beans, drained and rinsed
  • 1 cup fresh, canned or frozen corn
  • 1 cup halved cherry tomatoes
  • 0.5 cup cilantro, minced
  • 6 tablespoons fresh lime juice
  • 4 tablespoons olive oil
  • 2 tablespoons agave
  • 0.25 teaspoon cayenne pepper
  • 1 teaspoon salt, or more to taste
  • 1 large avocado, chopped ((or 2 medium))

Instructions 

  • Combine black beans, corn, cherry tomatoes, cilantro, lime juice, olive oil, agave, cayenne pepper, and salt in a large bowl.
  • Mix well, cover, and refrigerate for at least 30 minutes or overnight.
  • Just before serving, gently fold in chopped avocados and serve.

Notes

For extra flavor, add a squeeze of fresh lime or chopped jalapeƱos.
