Ingredients

Salad Ingredients

  • 14 to 16 ounces romaine lettuce (roughly one large head or two packages of pre-cut romaine)
  • 1 cup kalamata olives (sliced)
  • 1 cup pepperoncinis (whole or sliced)
  • 2 cups cherry tomatoes (halved)
  • 2 cups salami (cut into strips)
  • ½ cup red onion (thinly sliced)
  • 6 ounces grated parmesan cheese (about ½ to 1 cup)
  • ½ cup extra virgin olive oil
  • 3 tablespoons white wine vinegar (or substitute with lemon juice or red wine vinegar)
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon dried parsley
  • ½ teaspoon dried oregano
  • ¼ teaspoon black pepper
  • ½ teaspoon sea salt

Instructions 

  • Prepare the dressing by whisking together olive oil, vinegar, garlic powder, onion powder, parsley, oregano, black pepper, and sea salt in a bowl.
  • Chop romaine lettuce and add to a large bowl. Slice olives, pepperoncinis, red onion, and halved cherry tomatoes. Add salami strips.
  • Toss all salad ingredients together and sprinkle with grated Parmesan cheese.
  • Pour the dressing over the salad and toss gently to coat.
  • Taste and adjust seasoning with more cheese, dressing, or salt and pepper as needed.
  • Serve immediately or let sit for a few minutes to meld flavors.

Notes

This salad pairs well with grilled meats or can be enjoyed on its own with added protein.
